Crispy on the outside and tender on the inside, cachapas are savory-sweet corn pancakes, a traditional street food in Venezuela (and one of my absolute favorites!). They are typically eaten with queso de mano, a  Venezuelan fresh cheese, or just butter. Venezuelans cook cachapas in a budare, a clay or iron plate similar to a griddle. By Gaby Melian. The Venezuelan restaurant is inspired by founders Jean D’Amico and Miguel Pereirais’ heritage and their families’ love of food over several decades. NOSO serves a variety of dishes including small plates and street food. It’s achieved an overall TripAdvisor rating of 5.0 and has received over 150 “excellent” ratings.The restaurant has beaten more than 1,400 Liverpool-based venues to reach the top spot, but this isn’t the first time NOSO has become number one, as the restaurant was awarded the top spot back in September. Hallacas are a Venezuelan tradition dating back to the time of colonization. With an Indigenous name and a number of ingredients crossbred from our Venezuelan Aborigines and European settlers, hallacas are the perfect symbol of our mixed culture. Hallacas are so much more than that to any Venezuelan, though. They represent a tradition that brings family and friends together during this special time of year. That’s right — we only make them during Christmastime. We wait all year long for that first bite that brings us back to cherished childhood memories. Para 1960, Armando Scannone comienza un trabajo de recopilación de recetas tradicionales de Venezuela con ayuda de su cocinera y de su ama de llaves. Pasa alrededor de 10 años de su vida, catalogando, midiendo, practicando y recopilando recetas tradicionales.​ Scannone no pudo publicar su primer libro Mi cocina en Venezuela, ya que ninguna editorial venezolana quería publicar su libro. Finalmente logró publicar en 1982 usando una editorial española y se trajo los libros a Venezuela que se convirtieron rápidamente en un best-seller. He spends around 10 years of his life cataloging, measuring, practicing and compiling traditional recipes. Scannone was unable to publish his first book Mi cocina en Venezuela, as no Venezuelan publisher wanted to publish his book. He finally managed to publish in 1982 using a Spanish publishing house and brought the books to Venezuela that quickly became a best-seller. Other books would later follow, such as the blue book on Venezuelan Creole cooking, the green book on light recipes, the orange book for school snacks, and the yellow book with a menu catalog.
